There’s nothing like enjoying a delicious meal outside on a warm summer’s evening with friends. My favourite kind of meals are those that look impressive but are fairly easy and quick to make. This beef, halloumi and capsicum salad is one of those recipes. I used Silver Fern Farms Beef Stir-Fry which is great quality, lean and easy to use since it’s already cut! Red meat is also a good source of iron, zinc, vitamin B12, vitamin B6, B1 and B2 and B3. I used a simple lemon, herb and garlic infusion with the tender beef for extra flavour, then mixed it with some yummy summer vegetables and halloumi cheese. So good! Here’s the recipe
Sweet capsicum, beef and halloumi salad
Serves 3-4
For the beef:
1 packet of Silver Fern Farms Beef Stir-Fry
Juice of one lemon
Finely grated zest from half a lemon
4 cloves of garlic, peeled and finely chopped
1 tsp fresh thyme, chopped
1 tsp dried oregano
½ tablespoon olive oil
2 tsp worchester sauce
Pepper and salt
For the salad
2 teaspoons olive oil
1 red capsicum
1 yellow capsicum
1 red onion
1 large zucchini
100g halloumi
3 cups of baby spinach or other salad greens
Extra herbs, to top the salad
Dressing:
Juice from 1 small orange
Zest from ½ orange
1 tsp balsamic vinegar
2 teaspoons neutral flavoured oil
METHOD:
In a glass bowl, add the lemon juice and zest, garlic, olive oil, herbs, worchester sauce and pepper and salt. Mix through the beef and leave to infuse in the fridge for at least one hour.
Cut the capsicums in half and remove the core. Slice into thin slices. Chop the zucchini into pieces and the red onion into thin slices. Heat the olive oil in a pan over a medium/high heat. Cook the vegetables, stirring regularly until the zucchini starts to brown lightly. The vegetables should still be a little crisp – not soggy.
To cook the meat:
Shake off excess juices, then heat a little oil in a pan over a high heat. Cook the meat until medium rare. Set aside while you cook the halloumi.
Cut the halloumi into slices and pan fry until golden brown.
To assemble the salad, place the baby spinach or other salad greens on a platter or bowl. Add the pan fried vegetables then top with the meat and halloumi. Sprinkle over fresh herbs.
Mix together the salad dressing ingredients in a small bowl and drizzle over the salad just before serving. Serve with new potatoes and crusty bread.

Oh my, there’s so much you can do with red meat! Normally I’d say that my favourite is slow cooked beef stew with lots of onions, carrots and pulses (I basically lived on the stuff while I was pregnant, with a large helping of creamy mashed potatoes!). But if you have quality (like something from Silver Ferns Farms) I’d go for something really simple, to let the meat shine, like a quick stir fry with plenty of fresh veges.

Omg we have just had beef enchiladas (using rump steak) so good.. fried up some onion and courgette, added rump steak strips (seasoned with enchilada seasoning) roll mixture up in wraps, place in dish pour enchilada sauce over, grated cheese and bake.. served over rice with sour cream and a tomato and cucumber salsa.. it was so yummy..

My favourite dish made with red meat would have to be beef fajitas! My family loves them. I use beef stir fry strips like the Silve Farms strips you used above. I add in red onion, green and red capsicum to the pan and use a fajita seasoning with a bit of rice bran oil. I serve them with tortillas, salsa and light sour cream. So delicious!
