Strawberry and Quinoa Salad. One thing I wanted to focus on for 2013 is eating more whole foods and eating more vegetables, especially at lunch time where a salad + meat sandwich seemed to make a frequent appearance in 2012. I’ve been wanting to make more use of quinoa. It looks like a grain but it’s actually a seed which provides a good source of protein, vitamins and minerals. This mix of greens, nuts, strawberries and halloumi is really rather delicious. I’ll be making this again for work.
Ingredients (serves 2)
1/2 cup quinoa
1 cup water
1 punnet strawberries, chopped
1/2 cup fresh green beans
60g halloumi cheese
10 walnut halves
2 large handfuls of baby spinach
balsamic vinaigrette
Rinse the quinoa under running water in a sieve. Place in a pot with one cup of water. Bring to the boil and simmer for approximately 12 minutes until all liquid has absorbed. Set aside. Cut the ends off the beans and put in a pot of boiling water for two minutes. Drain and leave the beans to cool. Cut up halloumi and put slices in a hot frypan for a few minutes. Mix the quinoa, strawberries, beans, walnuts, and spinach. Add slices of halloumi and add a touch of balsamic vinaigrette. Eat up!
