Breakfast is the most important meal of the day, so why not get your day off to the best start with this yummy layered breakfast cup. It’s packed full of nutrient rich ingredients, tastes amazing and looks pretty cute too! Prepare one tonight and simply grab out of the fridge in the morning for a quick breakfast – or any other meal! I had this for lunch on Friday. There were envious colleagues in the office!
Here’s what you’ll need to make this version:
1/2 cup natural yoghurt
1/2 cup frozen berries, defrosted (I used raspberries)
4 tablespoons toasted buckwheat (or you could use oats)
3 teaspoons sunflower seeds
2 teaspoons chai seeds
A sprinke of raw cashews
1 tablespoon Alison’s Pantry Goji Power mix (optional but yummy)
Spoon a layer of raspberries in the bottom of a glass. Add a layer of yoghurt then 3 tablespoons of toasted buckwheat and a teaspoon of sunflower seeds and half of the chia seeds. Add some more berries then yoghurt. Top with the remaining ingredients and you’ve just made a delicious breakfast cup.
Feel free to mix it up and make your own version. Blueberries are yummy in these, as are cooked apple with cinnamon or sliced banana. It’s only limited to your imagination.
