I’ve tried a few chicken satay recipes and I have to say that this one is by far the best. Chicken coated with crunchy peanuts with the right combination of herbs and spices, it’s delicious. Serve with stir fried vegetables and fried rice. The perfect Asian meal.
Makes enough marinade for 400g of chicken.
2 teaspoons ground coriander
1 teaspoon turmeric
1 teaspoon ground cumin
1/2 teaspoon salt
2 tablespoons sugar
2 teaspoons peanut oil
2 teaspoons water
2.5 tablespoons crunchy peanut butter
Mix all ingredients in bowl. The marinade will be paste like. Mix in 400g of chopped chicken breast to cover all the chicken. Place chicken on skewers and grill on a tray containing a rack in the oven until cooked.
