Every now and then I get cravings for fries. This happened when I went to make dinner the other day and I had no potatoes. Or kumara. So to avert a cravings crisis, I decided to use carrots instead and they turned out rather delicious. I’d highly recommend giving this a go. Carrot fries are lower in calories, and a good source of vitamin A. Enjoy!
Ingredients for 2 serves:
2 -3 large carrots
sprig of rosemary
3 cloves of garlic
salt and pepper
1 tablespoon good quality olive oil
Method:
Preheat oven to 190 degrees Celcius. Peel carrots and cut into long chunks. Dry off any moisture. Place in a roasting dish. Peel garlic cloves and finely chop. Sprinkle over the carrots, along with the leaves from the rosemary. Drizzle over the olive oil. Toss the carrots around in the oil/garlic/rosemary mix until they are coated. Sprinkle lightly with salt and pepper. Cook for 18-20 minutes, or until fries are golden brown and cooked through.
