These high fibre muffins make a tasty breakfast on the go, or a sweet morning tea snack. Makes 12.
Ingredients
1/2 cup boiling water
2 cups bran
1/2 cup wholemeal flour
3/4 cup white flour
1 teaspoon cinnamon
1 cup yoghurt
¼ cup of macadamia oil
¼ cup brown sugar
1 teaspoon baking soda
2 tablespoons golden syrup
1 tablespoon boiling water
1 large apple, grated
1 large ripe banana, mashed
1 cup of blueberries (you could leave these out if you wanted)
Preheat oven to 180 degrees Celcius. Pour boiling water over bran in a large mixing bowl and stir to mix. Leave to cool and mix in the flour and cinnamon. Combine yoghurt, oil, brown sugar, golden syrup, grated apple, mashed banana and blueberries in a separate bowl. Dissolve the baking soda in the boiling water and mix in with the yoghurt mix. Make a well in the middle of the flour and bran mix and pour in the liquid mixture. Mix just to combine.
Leave the mixture to stand for 15 minutes, then spoon into greased muffin tins. Bake for 15-20 minutes.
