I love the start of a new year. Even though you can start with plans and goals at any time, the start of a new year just seems like a great time to get organised and kick start the year right. Having a well stocked fridge and pantry with a few essential items can really help with getting into a good routine with healthy eating and meal preparation. After all, there’s nothing worse than staring into the fridge or pantry and having no idea what to create – I know I’ve been there!
So to help you out this year, I’ve put together some ideas on fridge and pantry essentials for simple meal and snacks including yummy, nutritious breakfasts, lunches and snacks. So clear out your pantry of all those old things you never use, and restock so you’re all organised and ready to go for healthy breakfasts, lunches and snacks.
Pantry essentials:

Brown rice, or for a quick option instant brown rice cups
Quinoa
Tinned chickpeas
Nuts
Seeds (including chia seeds)
Coconut
Tinned salmon
Dates
Oats
Olive oil
Quality breads/wraps
Herbs and spices – my essentials are smoked paprika, oregano, cumin, ground coriander, paprika, chili flakes, garlic powder
Nice to have:
Other dried fruit for bliss balls, muesli bars and homemade granola
Freeze dried fruit – a little expensive but it does go a long way!
Raspberry balsamic vinegar – tastes amazing as a dressing!
Some bliss ball type snacks for those times when you don’t have anything prepared.
Fridge/Freezer essentials:

Feta cheese and hard cheese
Unsweetened natural yoghurt or Greek yoghurt
Milk
Frozen berries (or fresh when in season)
Baby spinach or other greens for salads
Cherry tomatoes
Other fruits/vegetables – chop some up and store in containers in the fridge for snacks
Eggs
Cheese, yoghurt and milk are an excellent source of calcium, Vitamin A and B12. Yoghurt and milk are also good sources of protein to help keep you satisfied.
Fruit and vegetables provide lots of vitamins, minerals and antioxidants and can form the base of many meals. Frozen berries are super handy for smoothies and to add to cereal and oats when berries are not in season. Eggs are easy and fast to prepare and provide a range of nutrients as well as being a source of protein.
Nice to haves:
Smoked salmon (you can just use tinned salmon as a cheaper option)
Hummus
Pesto
Pesto and hummus can be used as spreads and dips and smoked salmon is a good source of protein and omega 3 fats.
So here’s what you can put together:
Breakfasts
Overnight oats

A yummy combination of oats, milk, yoghurt, fruit and seeds, this makes a nice alternative to porridge in the summer. Here’s the basic recipe:
Soak ½ cup of oats with ½ cup milk overnight. In the morning, stir through unsweetened yoghurt, fruit and top with nuts and seeds plus extra fruit and coconut. You can make more than one day’s worth too, just double or triple etc the recipe.
Chia puddings

The chia seeds in this recipe provide over 11g of fibre – that’s about 1/3 of your daily needs! Fibre is great for your digestive system and gut bacteria and also helps keep you feeling full. Chia seeds are also a good source of a number of other vitamins and minerals and contain some plant based omega 3 fats, so they make a nourishing breakfast. Here’s how to make a basic chia pudding:
Soak 2 tablespoons chia seeds overnight with 1/2 cup of milk. Add fruit plus nuts and seeds. If you like things a wee bit sweeter drizzle with a teaspoon of maple syrup or honey. Top with a dollop of yoghurt. Here’s another recipe for a raspberry and coconut chia pudding too.
Egg breakfasts

There are so many different ways you can have eggs for breakfast. Poached or scrambled on toast with tomato and avocado, omelets with vegetables and feta cheese, sweet omelettes with yoghurt and fruit…. Check out the recipes I have here for some inspiration.
Homemade muesli

A combination of oats, nuts, seeds, coconut and either dried or freeze dried fruit makes a delicious nourishing breakfast. I’ve got a couple of yummy recipes here cashew, coconut and strawberry and also a recipe for plum, cashew and coconut muesli/granola. Top with a dollop of natural yoghurt.
Smoothies

Smoothies are a great quick breakfast that you can have on the go. There’s so many ways you can create a smoothie but my basic formula is a mixture of milk, yoghurt, fruit, vegetables and nuts or seeds. I’ve created a guide for making balanced smoothies here.
Lunch ideas

Having some quick, healthy lunch options makes life so much easier. With just a few items listed above you can create a range of different lunch options in less than five minutes. Here’s some options for one serve –
- Heat one brown rice cup and mix through salmon, feta cheese, avocado, cherry tomato, red onion, red capsicum and baby spinach. Stir through a teaspoon of raspberry balsamic vinegar and olive oil.
- Rinse and drain a tin of chickpeas. Heat a teaspoon or two of olive oil in a pan. Add the half the chickpeas and sprinkle over 1/2 teaspoon of smoked paprika and a sprinkle of dried oregano. Place in a bowl and mix through a heaped teaspoon of pesto. Add cherry tomato halves, chopped capsicum, and a sprinkle of feta cheese and a tablespoon of cashew nuts.
- Cook a serve of quinoa as per instructions on packet. Mix through some smoked salmon, chopped cucumber, tomato and red onion. Add a dollop of natural yoghurt mixed with fresh herbs.
- Heat one brown rice cup and place in bowl. Add baby spinach, chopped cherry tomato, cucumber, avocado and chickpeas (if you want, pan fry in olive oil with some smoked paprika first), feta cheese.
- A range of sandwiches and wraps – you can make them vegetarian with cheese and salad, or do smoked salmon and salad or even mashed feta and chickpea with salad.
Snack ideas

I find I need a snack between meals some days to help tide me over and these are some of my favourite nourishing options that are also delicious 🙂
With the essentials listed you can have:
*Yoghurt with berries or other fruit
*Smoothies
*A handful of nuts
*Homemade bliss balls (check out a recipe here) or store bought bars/balls for those times you don’t have anything prepared.
*Roasted chickpeas (recipe here)
*Vegetable sticks, cheese and hummus
* Individual yoghurt containers. I like De Winkle plain unsweetened. These are great to grab for work when you’re running late!

Chia puddings: I realize that Chia seeds have been available for a very long time. But I’m only just getting started with them. I also have to confess to having a rather sweet tooth and also to being the sort of Nana that indulges my family in frequent treats. So the way forward is for me to develop a repertoire of nutritious, delicious and healthful desserts. On my To-do list for 2017, is to ditch the diets – quit the unhealthy sugar- trapped puddings and just concentrate on providing simple, satisfying, healthy meals. It’s never too late to learn new culinary tricks – or to cull bad old habits!

I’d have to say your egg breakfasts are pretty stellar. Especially since I’m on a keto diet, the idea of incorporating pesto with my eggs is something I think will really change my typical breakfast combo. Also, using feta in salads is something I’ve heard so much about but I’ll be using your tips to try it out. I’ll let you know how it goes 🙂

This post is just what I have been looking for. Wanted to try overnight oats and chia puddings for ages. Also definitely think your first lunch suggestion could become a favourite in my house that surely will be greeted with some envy at work lunches.
The brown rice cups-with a commute of over four hours a day, leaving the house before 7am and not getting back til after 6 at night at earliest- anything that saves a lot of time, is easily transportable or can be very quickly prepared for dinner is extremely helpful!

I loved all the lunch ideas. I get into such a rut and one of my resolutions with my partner was not to buy lunches out anymore so all of these were super helpful. I especially love the idea of the chickpeas with smoked paprika, capsicum, feta and cashews. Yum! We always have tins of chicken peas in the pantry but I never really know what to do with them aside from a curry.

I love this entire post, but if I had to pick one item it would have to be the chia puddings. So easy to do on meal prep Sunday and to pick up and go on those mornings when you’re running out the door at a minimum of 10 minutes late ????

Definitely the Chia Puddings. I learnt that it is high in fibre. And, my hat would be very useful for me. Rather than eating loads of unhealthy, high in fats/salt content food to feel “full.”

Heat one brown rice cup and place in bowl. Add baby spinach, chopped cherry tomato, cucumber, avocado and chickpeas (if you want, pan fry in olive oil with some smoked paprika first), feta cheese.

Chia Seed Pudding! I loved soaked oats, and the fact that it’s basically the same concept is so easy. The dish can easily be turned into a healthy dessert which is awesome. I also love Chia seeds because they’re really good for your digestive health as well.

My favourite would be the lunch ideas with the brown rice they both sound delicious. We normally do leftovers for lunch. But there are some days we don’t have leftovers so love the idea of keeping a couple of easy heat cups of brown rice to add with salad ingredients and salmon! Yum!!!

I’d like to share my healthy salad idea :o) …
Raw Broccoli Salad
In a bowl throw in all the following….
1 Head of Broccoli (Wash and break Broccoli down to bite size, not too big – discard the rest)
1 Red Onion (thinly sliced)
Cherry Tomatoes (halves)
Red, Green, Yellow, Orange Capsicums (Sliced 2 pieces of each Capsicums and Dice them together)
1 Medium Cucumber (Sliced)
1 Firm Avocado (Diced)
Sesame Seeds (Toast in a Skillet for 3 minutes stirring well with a wooden spoon)
For Garnish
Half Lime and Lemon (Squeezed Juice) *Optional*
Olive Oil
Fresh Parsley (Chopped)
Toss or stir all ingredients until well combined.
Pink Himalayan Salt and Pepper to taste. Enjoy!
NOTE: I use Best Food Mayo in my Broccoli Salad but choose whatever dressing you like. Perfect for that Summer BBQ or enjoy as a snack! I always eat this on it’s own.

It’s one thing having lots of healthy food available which I’ve definitely started doing but having great ideas to follow is a huge bonus. It gets a bit hard being a busy working mum of 3 boys. All of these recipes look amazing and not very time consuming. Thanks for the ideas and inspiration.
My favourite is the bliss ball snack idea ! I’m a constant snacked especially at work and these will be great I can freeze them and make them in bulk , means the chocolate can be put to rest and these will be so much better for me !

The chickpea salad idea for lunch. I struggle to find ideas for lunch. Because of my diabetes I tend to avoid bread, rice, pasta etc just because I cannot afford to have my blood sugars dropping around 3pm when most of our meetings are held.

My favorite idea is the Overnight oats. I love oatmeal, but it’s just too hot in the summer to eat it the traditional way. This is a great idea!

I’m such a sucker for smoothies but also have a big sweet tooth so the vanilla and boysenberry smoothie sounds TO DIE FOR!
My kids and I both love porridge so the idea of the porridge alternative, having it cold in the summer sounds great! Also love that you can make in advance will definitley try!

Just made this for lunch today,
Heat one brown rice cup and mix through salmon, feta cheese, avocado, cherry tomato, red onion, red capsicum and baby spinach. Stir through a teaspoon of raspberry balsamic vinegar and olive oil.
And I am so happy, Tastes amazing!

Bliss Balls are always one of my faves. I also love having pesto and hummus in the fridge because they can go with virtually any meal .yum yum
I would love to give the home made museli a go! To save money I am trying to use up all the things we currently have in our fridge/freezer and cupboards so it would be great to whip up a big batch of healthy museli that will keep us full without a tone of added sugars!
Bliss balls are the best for a sweet treat. If I don’t have time to make my own I’ll buy the Tom & Luke ones, they’re delish!
I have always been curious about chia seeds and this recipe looks awesome. I have had them before and loved it and am looking forward to trying it at home now!
I love the idea of chia seeds, they are fantastic in a smoothie for breakfast, it really helps you feel full for most of the day, and it means that you only need to top up for lunch and dinner.

Hi there…we are just reorganising our pantry and trying to get rid of all the junkfood in our life. We are trying to built good habits for our 3 kids. I have started making smoothies everyday and they love it…well baby number 3 cant have any yet but soon…a 150$ prezzy card would last us a long way! Yummy post…now I feel hungry!

The lunch option (using brown rice) is my personal favourite! Such a great idea for a quick healthy lunch at work. All the ingredients could easily be prepared at work also, primo! 🙂

Over night oats are one of my favourite breakfasts, they’re also great for early starters and those who tend to skip breakfast. I’ve encouraged a lot of dairy farmers to take a portion with them to the shed during their morning milk.

Home made bliss balls. I’m great at healthy meals, but getting the munchies really gets me. I used to work at tank and I remember frooze balls, and I’ve made my own ever since. Better in the freezer and having cold with a nice big cup of water.

The smoothie section was nice (and had a great pic!). I have a medical condition which means I feel extremely sick and almost throw up when I eat solid food at breakfast, so smoothies are what I normally start the day off with.

So many great and actually practical ideas! I think of these are things that we already keep stocked as our essentials but it is so nice to get fresh ideas! We love smoothies and making bliss balls, so my favourite idea from above are the overnight oats and the chia seed pudding. I feel like my kids would love helping to make these AND eat them. I like the look of the muesli and the fact that i can put my favourite nuts and dried fruits in it. I keep meaning to try making it but when i go to buy all the nuts and seeds i can never justify it.
I love the Chia pudding recipe. I get stuck for ideas for breakast and tend to eat the same breakfast every day. Your chia pudding recipe sounds so delicious and nutritious. My kids would love it too and I love knowing my kids have had a healthy start to their day.

The bliss balls! They are such a good thing to have on hand, even grab in the morning on my way to work to have something to get my metabolism started and then have my overnight oats at my desk at work. Also grab a bliss ball between meetings or on my way to/from the gym when I’m getting hungry! So good!

I like the homemade blissballs concept. Mid-afternoon can be a dangerous trap for me . Even though I’ve done well up until 3.30 I find that I frequently feel hyperglycemic at this time of day. A tasty little treat like these would be a quick pick-me-up!
