Hello and happy Wednesday! (Or Thursday if you’re an email subscriber and getting this a day behind). This morning I woke up and thought for something a little different I might start a series called “What I ate Wednesday”. I know I’m always quite interested in what others eat (hey, it’s my job!) so I thought others might be interested in what I eat.
So here it is, my day on a plate. Nothing fancy. Because simple food can be healthy food too. The photos aren’t the flashest sorry as they’re just taken on my phone. Also, remember everyone is different in what they need in their portions etc, this is just what satisfied my needs today.
Breakfast:

Today was one of those days where I wanted to hit the snooze button and sleep for an extra hour. I did hit snooze, but only for ten minutes. I woke up wanting toast and needing breakfast in a hurry. I’m a great fan of Vogel’s. I topped one slice with avocado and tomato and put crunchy peanut butter on the other slice. These are my two favourite toppings. Most mornings I make smoothies in my Nutribullet for my husband. It’s a bit of a trade. I’ll make smoothies, he’ll make coffee. I find I want to chew something in the morning so I’ll have a just have small smoothie and then something else. Today’s smoothie was blueberries, Greek yoghurt, chia seeds and banana.

I had a coffee when I got into the office. I love coffee and for me it’s one of life’s little pleasures that I really enjoy. So most days I’ll have one. We have a coffee machine at home now so most of the time I’ll make it (edit – my husband will make me one…) and I’ll take it to work.
Lunch

I was out on the road seeing clients and I didn’t get to have lunch till after 1pm. I was fairly hungry by then so luckily I had a good lunch packed. I had yesterday’s leftovers – roast chicken and coleslaw. I added some cherry tomatoes from the garden and also quinoa that I had cooked and frozen in a mini bag. I love it when I’ve been organised and have things like that on hand! I heated that up at work and mixed it into my coleslaw and chicken. I also added a blob of pesto for extra flavour. I ate this at my desk as I used my lunch break to go for a run.
Afternoon tea

Even though I had a decent lunch I was pretty hungry around 3.30pm so I had some Greek yoghurt, berries and a banana.
Pre dinner
Not pictured, but I ate some almonds from the top of the muesli jar before dinner. It was the first thing I saw hehe. Anyone else do this? I was a bit peckish.
Dinner

You know those times when you have a real craving for something and you just have to have it? Well tonight it was corn and zucchini fritters with bacon. This totally hit the spot and was amazingly delicious.
We have lots of zucchini in the garden so I grated a fairly large one into the mixture along with corn, spring onions and lots of fresh chives. I don’t eat a lot of bacon as it’s a processed meat, but to me, bacon and fitters just go together. I bought some at the supermarket on the way home and grilled it. I served these with a salad and a little sour cream plus I layered a whole sliced tomato and avocado through the fritters.
While I was making the salad I also ate half a slightly overgrown Lebanese cucumber and some cherry tomatoes. I love Summer because there is always plenty in the garden. I picked a cos lettuce, tomatoes and cucumber then added some red onion and a little feta cheese to make the salad.
During the day I had a couple of bottles of water and one decaf coffee.
So that’s it. My day on a plate. True story. Unadulterated. No fancy things you can’t pronounce. Nothing you need to take a mortgage out to buy.

LYum! I like the look of your dinner! And it has just reminded me to check my courgettes! I usually see one and tell it I will get you tomorrow, a couple of days later it is marrow! Must try stuffing one of them big boys one of these days!
